Chicken Alfredo Biscuit Casserole

This is a good recipe to have that you can pretty much change it up each time. You can either have as is, serve it with noodles, serve it with rice or even use a refrigerated pie crust instead of biscuits.so many options with it!


Chicken Alfredo Biscuit Casserole
1 tablespoon butter
2 cups sliced fresh mushrooms
1/2 cup chopped onion
1 jar {16 oz}Alfredo pasta sauce 
1/4 cup milk
2 cups chopped cooked chicken
2 cups frozen broccoli florets ~ thawed
1/4 teaspoon dried basil leaves
1 can refrigerated buttermilk biscuits
1 tablespoon butter ~ melted 
1 tablespoon grated Parmesan cheese

In skillet, melt 1 tablespoon butter over medium heat. Cook mushrooms and onion in butter, stirring occasionally,  until tender. Stir in Alfredo sauce, milk, chicken, broccoli and basil. Cook until mixture is thoroughly heated and bubbly and till chicken if fully cooked, stirring constantly. Spoon into sprayed 8x11 or 9x13 baking dish.

Separate dough and Cut each biscuit in half crosswise. Arrange around edge of baking dish, overlapping slightly. Drizzle biscuits with melted butter; sprinkle with Parmesan cheese. 

                                Bake at 375 degrees for 15 to 20 minutes or until biscuits are golden brown 

Breakfast Pizza

This can go for breakfast or even dinner. You can really add whatever "toppings" you like to it or just keep it simple as the recipe. It is also yummy dipped in a little syrup.


Breakfast Pizza
2 can crescent rolls 
{or frozen rolls ~ thawed and place rolls close together on pan and flatten out with hand}
1 pound sausage of choice
1 cup shredded hash browns
1 cup shredded cheese of choice
4 eggs
1/4 cup milk
salt and pepper to taste

Brown sausage and drain drippings, set aside. On a greased cookie sheet, Unroll crescent rolls from can, but keep them attached together. {Or lay rolls out}. Sprinkle hash browns over top of desired dough. Then in a small mixing bowl,  whisk eggs milk, salt and pepper together. Sprinkle cooked sausage evenly over hash browns. Then pour egg mixture evenly over top of meat. Sprinkle top of pizza with desired shredded cheese. Bake at 375 degrees for 25 minutes, until dough is cooked and browning. 

Other topping ideas:
chopped green pepper
diced onion
chopped red pepper
crumbled bacon 
chopped ham

Ranch Chicken & Broccoli Foil Dinner

I love Tin Foil Dinners in the summer. We have a fire pit in our back yard and are always roasting marshmallows, tin foil dinners, cooking hot dogs, enjoying woof-ums, etc. But since winter doesn't allow that as much, ya have to do what with ya can. These are so filling and full of flavor.


Ranch Chicken & Broccoli Foil Dinners
1 package chicken-flavored stuffing mix
1 1/4 cup water
4 6-ounce boneless skinless chicken breasts ~ cut into bite size or halved.
4 cups fresh broccoli florets
1 cup shredded cheddar cheese
real bacon bits
4 tablespoons ranch dressing
salt & pepper to taste

Spray 4-6 sheets of heavy-duty aluminum foil with cooking spray.  Combine stuffing and water. Spoon about 1/4 of the stuffing mixture onto the center of each foil sheet.  Top stuffing in each packet with chicken, season with salt and pepper, then add 1 cup of broccoli. Sprinkle with about 1/4 cup of the cheese and bacon, then drizzle with 1 tablespoon of ranch dressing. Repeat with all packets.

Bring up foil sides and fold to seal, leaving room for heat circulation inside.  Place packets on a cookie sheet and bake at 400 degrees for 25 to 30 minutes, till chicken is fully cooked. Remove packets and let stand 5 minutes.

Taco Cups

These are a good meal to try. These can be made by recipe or you can modify them to personal liking. They are a different spin on tacos. Plus people think you spent tons of time doing them {Which is not the case}


Taco Cups
1 pound ground beef
1 packet taco seasoning
3/4 cup black beans ~ drained
3/4 cup pinto beans ~ drained
corn tortillas ~ small 
medium queso dip 
chunky salsa
shredded cheese
sour cream for garnish 

Cook ground beef till fully done. Drain drippings and add taco seasoning to meat. Mix till well blended. Add in black and pinto beans. Heat through and set aside. Warm up corn tortillas for about 10 seconds, just so they are more bendable and don't rip. Push 1 tortilla at a time into a lightly greased muffin cup. Put one school full of queso dip in bottom of tortilla. Then top with spoonful of meat mixture. Then add spoonful of salsa and top with a little shredded cheese. Repeat steps to all cups.

Bake at 375 degrees for 10-15 minutes, till tortillas are a little crispy. Once removed from over and getting ready to serve, top with a little sour cream. You can even sprinkle a few chives on top to give a little pop of green.

Bacon, Egg and Biscuit Muffins

What a fun change to breakfast or having breakfast for dinner! My kids enjoy these because they are different and easy. You can also eat these plain or dip them in a little syrup.


Bacon, Egg and Biscuit Muffins
2 refrigerated biscuit rolls
5 eggs
4 tablespoons milk
1/3 cup shredded cheese
6-8 slices of bacon ~ cooked
salt and pepper to taste

Cook bacon, crumble and set aside. Whisk eggs, milk, salt and pepper together. Roll out 1 biscuit at a time until it is slightly bigger than the size of individual muffin tin. Grease muffin tins with cooking spray. Push one biscuit into each cup being sure to it all the way down and against sides. Leave the ridge hanging over edge. sprinkle a little cheese in bottom and then pour a LITTLE egg mixture into biscuit. They will/SHOULD look empty. *Don't pour too much egg in, or it will spill over edges while cooking.* Sprinkle bacon crumbs on top of egg. Repeat steps to all biscuits. 

Bake at 400 degrees for 10-12 minutes

Ham & Cheese Crescent Rolls

This is one recipe that you will definitely get your hands a little dirty. Totally worth it though. They also take a little longer to prepare then most recipes on here, but don't let that scare you away. Give them a try and you will enjoy them!


Ham & Cheese Crescent Rolls
3 cans Crescent Rolls
Deli Honey Ham
Swiss Cheese slices

Unroll crescent rolls, 1 tube at a time as you use them. Divide the rolls in half leaving two triangles together, making a rectangle. Lightly flour them or counter top and a rolling pin. Flatten rectangles out some. Place on a greased cookie sheet and top each with slice of cheese, then couple pieces of ham and then another slice of cheese. Once filled, roll or fold rectangles up. Bake according to package. Continue till all crescent rolls are filled.

Dinner in a Pumpkin

This is what we eat every year on Halloween.  I grew up with this tradition and I love it. It makes the night so fun and the dinner is super good.

Dinner in a Pumpkin

1 medium pumpkin {about size of basketball or a little bigger}
1 chopped onion {any size - depending on how much onion you like}
2 tablespoons vegetable oil
1 1/2 - 2 pounds hamburger
2 teaspoons soy sauce
2 tablespoons brown sugar
1 {4oz.} can sliced mushrooms ~ drained
1 can cream of chicken soup
1-2 cups cooked rice
1 {8oz.} can sliced water chestnuts ~ drained
 
Cut off top of pumpkin and clean out.  Draw a face on the pumpkin with permanent marker.  In a large skillet saute onions in oil until tender.  Add meat and cook till brown.  Drain drippings from meat - add soy sauce, brown sugar, mushrooms and soup.  Simmer for 10 minutes, stirring occasionally.
 
Add cooked rice and water chestnuts.  Place pumpkin onto a cookie sheet that is covered with foil.  Spoon mixture into the pumpkin and put pumpkin lid back on.  Cook at 350 degrees for about 1 hour or until inside of pumpkin is tender.  You can also cook with lid off.
 
When serving scrap inside of pumpkin. 

Crescent Pizza's

This is a great recipe for getting those kids in the kitchen.  My kids are always asking what they can help with when I am cooking or baking.  I love having them in there with me.

Crescent Pizza's
2 rolls refrigerated Crescent rolls
1 large package pepperoni
1 package string cheese ~ sticks cut in half
marinara sauce for dipping

Separate the crescent rolls into triangles. Place 4-5 pepperonis at large end of each triangle and top with half a string cheese. Roll up and if desired, bring up sides to seal, so cheese doesn't melt all the way out. If kids are helping, sometimes sides don't make it sealed.  Really no biggie, still tastes yummy. Bake Crescent Pizza's according to crescent roll package. A little longer for a crispier crescent roll.

Ham & Cheese Sliders

These are so simple. You can make as many {or little} as you want and the sauce on them is so good.  Not only is it yummy on these sliders, but it is delish on other meat sandwiches.



Ham & Cheese Sliders
24 good white dinner rolls
24 pieces good honey ham
24 small slices Swiss cheese
1/3 cup mayonnaise
1/3 cup miracle whip

Poppy seed sauce:
1 T poppyseeds
1 1/2 T yellow mustard
1 stick butter, melted
1 T minced onion
1/2 tsp. Worcestershire sauce

In a small bowl, mix together mayonnaise and miracle whip. Spread onto both sides of the center of each roll. Place a slice of ham and a slice of Swiss inside of each roll. Close rolls and place them into a large baking dish or heavy cookie sheet. Place very close together.

In a medium bowl, whisk together all of the poppy seed sauce ingredients. Pour evenly over all of the sandwiches. Let sit 10 minutes or until butter sets slightly. Cover with foil and bake at 350 degrees for 12-15 minutes or until cheese is melted. Uncover and cook for 2 additional minutes. Serve warm.

Creamy Chicken Enchiladas

There are tons of enchilada recipes out there.  This one has been in my family and it is one my husbands favorite dishes that I make.  It also makes a ton, which is great because he loves them as left overs as well.



Creamy Chicken Enchiladas
3-4 chicken breasts ~ boiled and shredded
2 cans cream of chicken soup
1 pint sour cream
1 small onion ~ chopped
1 small can diced green chilis ~ mild
1 1/2 cup shredded cheddar cheese
2 packages flour tortillas {burrito size}

Boil chicken till cooked through, let cool and then shredded. Mix cream of chicken soup, sour cream, onion, green chilis and 1/2 cup cheese together. reserve 1/2 cup of cream mixture and set aside.  Add in shredded chicken into remaining cream mixture.  Spoon mixture into flour tortillas.  Fold ends of tortilla in and then roll.  Place into a lightly greased 9x13 baking dish.  Spoon reserved mixture over tops of rolled enchiladas.  Sprinkle rest of cheese over top. 

Bake at 350 degrees for 35 minutes.

Yields: 15-20 Enchiladas

Fried Tacos

My husband had these growing up, so I have taken the recipe into our home.  They are so yummy.  Plus is makes a nice twist on just the average taco.   These are always a big hit.  Plus it is fun to have a Taco Bar and enjoy some good company.  People love these.


Fried Tacos
1 pound hamburger
1 can refried beans
1 envelope taco seasoning
flour tortiallas {small}
olive oil

sour cream 
olives 
salsa
verde sauce
lettuce
cheese
tomato
Any other toppings desired

Cook hamburger and drain drippings.  Add in taco seasoning.  In separate saucepan, heat up refried beans.  In another skillet, add oil and heat up.  {Enough oil to cover bottom of pan} Spread a little refried beans in tortilla and put a little hamburger. Put tortilla in oil and fry on both sides till toasted. Once all toasted, then add all topping choices and Enjoy!

Breakfast Crescent Roll Ups

This is one recipe that  I am always asked for. it may seem a little weird, but it is very delish! Kids enjoy it and us grown ups do as well.  I have never met a person that doesn't like breakfast for dinner sometimes.  Plus, with the recipe, you can make it for dinner or even for a weekend breakfast one morning. Versatile.


Breakfast Crescent Roll Ups
2 can crescent rolls
8 large eggs ~ scrambled
salt and pepper ~ to taste
8-10 slices bacon ~ cooked and crumbled
1/2 cup shredded cheddar cheese

Line a cookie sheet with foil and spray with cooking spray {this way easier clean up!}
In a skillet, add eggs, salt and pepper. Scramble until just done. Set aside to cool for 5 minutes. Open cans of crescent rolls and roll out dough into a large rectangle {with the long side facing you} and press all of the seams together. Once eggs are cooled, layer evenly over the cresent roll dough. Then sprinkle crumbled bacon and cheese evenly over the scrambled eggs. Carefully roll dough up {like you would cinnamon rolls}.  Place seam side down on the baking sheet.

Bake at 375 for 10-12 minutes, or until crescent rolls are golden brown.  Let cool for a couple mins and then cut into desired sized portions.

Unstuffed Pepper Skillet

There are so many different recipes to Stuffed Peppers.  If you like any of those then this will be on the "like list" as well.  It is full of flavor and really good.  I have one child that is not big into peppers, but for some reason she loved them in this recipe.  It throws a little spin on the stuffed peppers.  Totally worth trying!


Unstuffed Pepper Skillet
1 pund ground beef
1/2 onion ~ diced
2 large carrots ~ diced {6 baby carrots}
3 large green peppers ~ cut into chunks
salt and pepper to taste
1 {15 oz} can tomato sauce
1/3 cup water
1 teaspoon italian seasoning
1/2 teaspoon cumin
2 1/2 cups fully cooked rice
shredded mozzarella cheese

Brown ground beef and onions in large skillet.  Drain drippings and add carrots and green peppers to beef mixture.  Season with salt and pepper to taste. Cook for 2-3 minutes.  {You want peppers to stay a little crunchy.}

Stir in tomato sauce, water, italian seasoning and cumin.  Bring to a slow boil. Reduce heat and simmer for 10-15 minutes. 

Stir in cooked rice, until heated through.  Top with shredded mozzarella cheese. 

{Leftovers are very tasty in a tortilla!}

Homemade Pizza Roll Ups

These are seriously killer.  They always make a big hit with everyone.  Fun for just the family or make a double batch and have plenty for a little party. {Football game, Birthday, Girls night, Gathering with friends, etc}  These only take about 10 minutes to put together.  Plus, the kids always like helping with them. We always make them the same, but I have friends who have added things to them.  "Experiment" and have fun with them!


Homemade Pizza Roll Ups
2 cans refrigerated pizza crust
garlic salt
italian seasoning
1 cup sliced and chopped pepperoni
1 cup shredded cheese ~ of choice
1/2 cup parmesan cheese
sauce of choice for dipping

Dust a large cutting board or section of counter with flour.  Roll out pizza crust.  Season with garlic salt and italian seasoning to liking.  Top with cheese and meat.  Starting with a short end, roll crust into a tight log.  Slice into about 1" sections.  Place on a a lightly greases baking sheet.  

Bake at 425 degrees for 10-12 minutes.  Dip in sauce of choice.

Sloppy Jo Calzones

These are a fun twist on the normal Sloppy Jo.  Plus, what isn't good wrapped in a warm flaky crust? These are yummy with fresh vegetables, steams vegetables or even a little side of chips.  I have always cooked them in the over, but I got the idea of trying them on the grill next time.  How yummy!


Sloppy Jo Calzones 
1 pound ground beef
1 cup chopped onion 
1 chopped green pepper
1 can black beans ~ rinsed and drained
1/2 cup water
1 teaspoon dried oregano
1 can diced petite tomatoes
2-3 tubes refrigerated crescent rolls
1 cup shredded cheddar cheese
1 can tomato paste
1 envelope sloppy jo mix

In large skillet, cook beef, onion, and pepper over medium heat until meat is no longer pink.  Drain drippings.  Stir in sloppy jo powder mix, tomato paste and black beans, oregano and dice petite tomatoes. Heat through and then remove from heat. 

Separate crescent dough into rectangles {keeping 2 together}.  Be sure to seal perforations. Spoon about a fourth of the meat mixture onto half of every rectangle.  Sprinkle with cheese.  Fold the dough over filling and pinch edges to seal.  Cut little slits in tops of dough. 

Place on an ungreased baking sheet and bake at 375 degrees for 13-15 minutes, until golden brown.

Bacon Cheeseburger Roll Ups

These are such a yummy roll up.  If ya are every craving a burger, but don't want to go out to get one, these will satisfy the craving.  My family enjoys these.  In fact, I was talking to a couple friends about these, one had had them, the other had never had nor heard of them, but she immediately asked for the recipe because she knew her boys would love them.  These go great with a fresh tossed salad or even some raw veggies.


Bacon Cheeseburger Roll Ups
1 pound ground beef
6 bacon strips ~ cooked and diced
1/2 cup chopped onion
1 package {8 ounce} velveeta cheese ~ cubed
1 tube large refrigerated buttermilk biscuits
1/2 cup ketchup
1/4 cup yellow mustard

In a large skillet brown ground beef, bacon and onion over medium heat, until meat is no longer pink.  Drain drippings from skillet.  Add in cheese and stir until fully melted.  remove from heat.  

Flatten each biscuit into a 5 inch circle.  Spoon 1/3 cup of beef mixture into each biscuit.  Fold sides and ends over filling and roll up.  Place seam side down on greased baking sheet.

Bake at 400 degrees for 18-20 minutes or until golden brown.  In a small bowl, mix ketchup and mustard together and serve as dipping sauce for roll ups.

Taco Salad Wraps

We love Taco Salad at our house.  Sometimes it is nice to have something different about it, so it isn't the same thing every time.  We decided to try it wrapped up in a tortilla.  The experiment did not fail! It was very yummy.


Taco Salad Wraps
1 pound hamburger
1/2 cup salsa ~ brand and spice of choice
1 can chili beans ~ drained
2 teaspoons Worcestershire sauce
2 teaspoons onion powder
2 teaspoons chili powder
1/4 teaspoon garlic powder
pepper to taste
flour tortillas
1/2 cup shredded lettuce
1 roma tomato ~ chopped
shredded cheddar
tortilla chips or frito chips crushed
Any other topping choices 

Brown hamburger and drain fat from pan.  Stir in salsa, beans, Worcestershire sauce, onion powder, chili powder, garlic powder and pepper. Bring to a boil and reduce heat to simmer uncovered about 5 minutes. 

Spoon meat mixture into tortillas.  Layer with lettuce, tomatoes, cheese, crushed chips and any other topping choices. Then just roll them up and enjoy!

Ham n' Cheese Calzones

My kinds like to help with making these.  The night things about these, is you can really use any type of deli sliced meat that you prefer.  We just did ham because well, we all like ham! They go together pretty quick and easy.  Just be sure you don't over stuff or get it too close to edge. Don't want it to cook out on ya.


Ham n' Cheese Calzones
2 cans refrigerated pizza crust
20 slices shaved deli meat ~ meat of choice
2 cups shredded colby & monterey jack cheese
1/2 cup ranch dressing
1-2 tomatoes ~ cut into thin slices

Unroll pizza dough on a lightly floured surface.  Pat out dough to form a 16x12 rectangle.  Cut into quarters.  Top dough with ham, with in 1/2 inch of sides.  In a small mixing bowl, mix cheese and ranch dressing together, spread on top of ham.  Top with tomatoes. Fold each rectangle in half.  Seal edges with fork, pinching together.  Put on baking sheet sprayed with cooking spray.  

Bake at 400 degrees for 16-18 minutes, or until dough is golden brown.

Pizza Rolls

These are so easy & fun to make.  Especially with kids and in the summer.  You can really put whatever you want in them, but we just always keep it simple.

Pizza Rolls
3 loaves of frozen bread loaves
1 bag pepperoni
4 cups shredded cheddar cheese

Pinch some dough off thawed bread loaves, about the size of a golf ball.  Stretch dough out to a little bigger than palm of hand.  In center of stretched dough, add cheese & 3-4 pepperoni slices.  Fold edges into center & pinch shut.  Lay pizza rolls seam slide down on a greased cookie sheet.  sprinkle a little cheese into of rolls

Bake at 400 degree for about 15-20 minutes.  Rolls need to be golden brown. 

Dip rolls in choice of dipping sauce.
