Pumpkin Bread

Anyone that grew up with my husband or knows his family ... knows this pumpkin bread.  It is the best one around.  I love love love this recipe.  We have made mini loaves and given them out as neighbor gifts during holidays and everyone raves about how great it is.  I keep all these ingredients on hand, because at any given minute, there will be a want for this bread.  This recipe make 2 large loaves or 6 small loaves. It is also very delightful frozen.


Pumpkin Bread
3 cups sugar
1 cup vegetable oil
4 eggs
2 cups pumpkin
2/3 cup water

Mix together well.  Then sift together and blend into pumpkin mixture ... 

3 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon cloves
1 teaspoon cinnamon
1 teaspoon allspice

Then stir in:

1 cup semi-sweet chocolate chips. 

Grease loaf pans.  Bake at 325 degrees for 1 hour to 1 hour and 15 minutes, or until toothpick inserted into center come out clean.  Cool for 10 minutes and then turn pans upside down on cooling rack to release bread.  Let sit till bread drops by itself.
